Description

Oona Caviar is the first and only Swiss caviar from sturgeons grown in Swiss mountain spring water. As one of the few caviar producers to rely on the additive borax, the Oona Caviar is produced with a delicate skin, pleasant with a delicate consistency and fine melting texture. In addition to its caviar, the Kandertal-based manufactory also defined a fine set of connoisseur accessories, including the mother-of-pearl spoon we added to our portfolio.

Together with the Centre for Fish and Wildlife Medicine at the University of Bern, it has optimised husbandry conditions and developed new, more animal-friendly methods, for example to determine the optimal time for caviar maturity. Today, there are around 80,000 sturgeons in the breeding tanks.
