Oona Caviar is the first and only Swiss caviar from sturgeons grown in Swiss mountain spring water. Oona is Celtic and means Unity, the unique, the unusual and the reference is deliberately chosen because, after all, the river names in the local Kandertal valley point to the former Celtic settlement of the region.

Welcome to the Kandertal

The Tropenhaus Frutigen, which rears two sturgeon species, is located in this very valley. The sturgeons swim in pure, naturally warm mountain water, where state-of-the-art husbandry conditions and sustainability take top priority. The exclusively manual processing takes place on site and guarantees a rapid process from fish to tin. The focus of the caviar quality is deliberately on freshness - without any additives or preservatives.

Sustainable expertise since 2005

Since 2005, Tropenhaus Frutigen has continuously developed its leading role in sustainable fish farming. Together with the Centre for Fish and Wildlife Medicine at the University of Bern, it has optimised the husbandry conditions and developed new, more animal-friendly methods, for example to determine the time of optimal caviar maturity. Today, there are around 80,000 sturgeons in the breeding tanks.

Caviar without artificial additives

As wild fishing of sturgeon is now banned almost worldwide, sustainable and mindful fish farming offers an intelligent alternative. As one of the few caviar producers that does not use borax as an additive, Oona Caviar is characterised by a delicate skin, a pleasantly soft, delicate consistency and a fine melt. This is the only way the nutty flavour can develop perfectly. Oona Caviar is refined exclusively with pure Swiss salt because sustainability, purity and the accentuation of the finest flavour nuances are paramount.
