Craft and character

Unlike most champagne producers, Ployez-Jacquemart endeavours to retain the characteristics of each vintage in its blends and only uses a very small amount of reserve wine, if any at all. For the wines of the Ludes-based house, only juice from the first pressing is used and the wines undergo a very slow bottle fermentation in a 25-metre-deep cellar, which gives them a very fine perlage.

Less is more

Maturation "sur pointe" offers the antioxidant benefits of yeast without the wines becoming too rich through contact with it. When the wines are ready for disgorgement after up to 12 years in the cellar, only a very small dosage is added, usually 3 to 4 grams per litre. Ployez-Jacquemart's aim is to leave the structure of each wine intact so that the true character and personality of the harvest is revealed.

Laurence Ployez is the third-generation winemaker on the family estate in Ludes, which was founded in 1930. Ployez-Jacquemart owns 2.15 hectares of premier cru and grand cru vineyards in Ludes and Mailly-Champagne in the Montagne de Reims, known for their classic chalky slopes; Laurence Ployez-Jacquemart also buys premier cru and grand cru grapes from 12 hectares of vineyards from winegrowers with whom the family has worked for over 20 years. All the work in the vineyards is done by hand from the beginning of the growing season to the harvest.
